MANY JAI-ALAI AFICIONADOS HAVE SAMPLED THE UNUSUAL FOOD SPECIALTIES ASSOCIATED WITH THE BIRTHPLACE OF THE SPORT.
The Basque people are known as great eaters and Basque cooking has gained an international reputation. Two favorite dishes are:

• In winter the great luxury is anguilas, baby eels, cooked whole and served in sizzling hot olive oil with garlic and pieces of red hot peppers.

• Squid served "in its own ink", in a dark sauce, or cut up and deep fried in batter rings (calamares fritos) and in this case it should be served piping hot and with lemon wedges.

The Basque love and pride in the national cuisine is manifested in the preservation of their traditional eating clubs which number 100 in the Basque country. Once a week or so, groups of Basque men gather in these clubs and take turns preparing meals for their fellow club members. This intriguing institution is a totally male preserve.
